Native Crops in Latin America new book published by Taylos & Francis publishing house.
The editors of this work, which deals with different aspects of native crops in Latin America, are Ph.D. Ritva Repo-Carrasco-Valencia from the La Molina National Agrarian University in Lima, Peru, and Ph.D. Mabel Cristina Tomás, a researcher at the Center for Research and Development in Food Cryotechnology in La Plata, Argentina.
The content deals with recent research related to the potential use of native crops as sources of bioactive compounds (proteins, hydrolysates, peptides, antioxidants, essential lipids, dietary fiber, prebiotics and probiotics) and as ingredients in functional foods, revaluing ancient grains from Latin America: chia, amaranth, quinoa, Andean lupine, and sacha inchi, as well as a wide variety of native fruits such as camu camu, aguaymanto, lucuma, which have compounds that promote health.
The 13 chapters were written by prominent collaborators and specialists on the subject, among whom we find several members of CIDCA: María C. Añón, Mabel Cristina Tomás, Luciana Magdalena Julio, Vanesa Yanet Ixtaina, Alejandra V. Quiroga, Adriana A. Scilingo, Valeria A. Tironi, Ana C. Sabbione, Agustina E. Nardo, Santiago E. Suárez, and Susan F. García Fillería.
