An introduction to small-angle scattering and its application to food materials science

Professor Elliot Paul Gilbert from the Australian Center for Neutron Scattering, Ph.D. in Physical Chemistry from the University of Edinburgh, Ph.D. from the Australian National University and Honorary Professor from the University of Queensland, gave us a lecture
on August 29 in the CIDCA classroom.

In this dissertation he presented characterization techniques that allow establishing the structure/function relationship of new products and/or materials, with emphasis on the application of small angle X-ray scattering (SAXS) in different food materials.
